Trout Cheese Puff

2  lbs trout fillet
2  tbsp chopped pimento-stuffed olives
1/2  cup dairy sour cream
1  tbsp finely chopped onion
2  eggs separated
1/2  tsp salt

Preheat oven to 350 degrees.  Wash fillets, dry well on paper towel.  Lightly grease large shallow baking dish.  Arrange fillets in single layer in dish.  In medium bow, continue sour cream, cheese, egg yolks, olives, onion and salt.  Beat egg whites in medium bowl until stiff peaks form.  Gently fold beaten egg whites into sour cream moisture .  Spread over trout, covering completely.  Bake, uncovered, 25 minutes, test for doneness.  Puff bill be golden.  Serve from baking dish.  Serves 6.
